Gluten Free Chocolate Cupcakes (with no processed sugar)

I am so happy with how these cupcakes turned out! They are so easy and delicious!

You really won’t even be able to tell that their is no gluten and no processed sugar.

I am also elated with how fluffy they are – which is something that is not easy to achieve with gluten free goods.

You can use whatever kind of frosting you would like! Personally, I think they taste great without frosting, however, if you want to add a little something you could use

  • 1 1/2 cup nuts – I used cashews (soak for at least an hour)
  • 3 Tbsp unsweetened vanilla almond milk
  • 1/2 tsp sea salt
  • 4 tbsp honey
  • 4 tbsp butter 
  • 1 tsp vanilla 
  • 1/3 cup coconut cream

Just blend them all up in a food processor and frost over the tops of the cupcakes!
