Alright, just going to start off by saying this might be the best recipe that I have ever created.
It combines two of the best summer flavors; lemon, and blueberries.
This cake is not only gluten free, but is refined sugar free as well! The only sweetener I use is all-natural maple syrup.
You can make this recipe a sheet cake (one layer), or you can make it two layers with the homemade topping in-between. If you decide to make it one layer, use a 9×9 inch baking square baking pan. If you decide to layer it, use two round 8inch baking pans.
