Seared Scallops with Cilantro Pesto

Long time no post.. but I promise this recipe will be worth the wait! (if you like seafood!🤪)

I have been so busy with work and school lately that I haven’t had time to make these posts, but I have still been in the kitchen whipping up some recipes, and I hope to get them out during August!

Okay enough with the excuses.. now let’s get to the recipe. If you are a seafood person this is for you. If you aren’t a seafood person, try it! Because this one might be for you as well. I promise nothing tastes really fishy here.

There isn’t much you need to do to prepare the scallops before you sear them, just some salt, pepper, garlic powder, and some oil for the pan or grill.

The real kick of taste comes in with the cilantro pesto sauce 😍 This sauce has so much flavor I could see myself putting it on a lot of other foods as well, but the way it goes together with the scallops is something else.

It already has a but of a kick to it from all the cilantro, but if you want to spice it up add a jalapeño or chili pepper to it!

You just whip up all the ingredients in a blender and then top the scallops with it, so simple.

Since its summer and corn is in season I placed my scallops and sauce over some grilled corn, which was delicious. If you don’t have corn, you could cook up some orzo and place them over that instead. I also mix in some of the sauce with the corn as well to add more flavor.
