If you’re in a time crunch for dinner, and need something filling and delicious, this is a great recipe for you.
The thick creamy sauce is made with coconut milk, roasted red peppers, and mascarpone cheese.
Roasted red peppers (my favorite kind of peppers!) add a sweet kick of flavor to the sauce. You can make your own at home, however I chose to buy mine due to time restrictions.
I used gluten fettuccini noodles with this recipe, however, it would still work with regular pasta noodles.

The gluten free noodles I used are from a brand named Tinkyada. I have been eating it for half a year now, and it tastes almost exactly like regular pasta! It’s Non-GMO verified, and USDA Organic.
