Lemon Parmesan Baked Cod

Tonight for dinner I decided to change things up and have fish. Now in my family, I have loved ones who either love fish or dread it.

Personally, I am not a picky eater in the slightest, and will eat almost any edible food in front of me.

I wanted to make a dish that the ones in my house who aren’t the biggest fans of fish would still eat!

Some of my personal favorite fish to eat are salmon, red snapper, and cod.

There are nutritional benefits to all three fish, but since this recipe is cod, here are some interesting facts about cod fish:

-Cod is high in protein, and low in calories, fats, and carbs.

-Great source of vitamin B, especially B-6 and B-12.

-It is considered a lower mercury containing fish, just like salmon, shrimp, and sardines.

-Easily digestible, as compared to “muscle meats” aka steak, etc, that take longer to digest.

Tips:

  • Use a cookie sheet with a lip, as the juices will pour out into it.
  • I highly recommend using parchment paper so it does not stick to bottom.
  • Tastes well when paired with a potato and veggies
