Back at it again this week with a great summer salad.
If you have some ripe peaches around, try this salad out.
When I eat a salad I need it to have flavor, I can’t deal with boring salads that consist of just lettuce and dressing. This salad combines almost all of the flavors I love about summer. Fresh peaches, grilled corn, arugula, tomatoes, and my FAV burrata cheese.
This can be a main dish or a side dish. Add some prosciutto on it to bring some protein in, or some feta cheese.
This is also perfect for a hot summer day, because you can cook it all on the grill. Start by grilling the corn since this takes a little longer than the peaches.
While corn is grilling, grill cherry tomatoes. Either place them in tin foil and grill, or grill in a pan, and drizzle with about 1 tsp olive oil and salt to taste. Grill for about 5 minutes, until they start to pop a little.
Now, once you have the corn and tomatoes on the grill, it’s time for the peaches. Half and pit the peaches. Run a sharp knife along each peach’s seam to halve them. Then you’re going to want to lightly brush each side with olive oil.
Grill the peaches for 2-3 minutes or until light char marks appear, flip, and grill another 2-3 minutes.
You guy’s can use a dressing you love, or make one by combining:
2 tbsp balsamic vinegar, 1/4 cup olive oil, 1/4 tsp salt, 1 tsp lemon juice, 1 tbsp honey
Assemble the salad by placing arugula in a large bowl, sliced peaches, cherry tomatoes, corn (sliced off the cob), and balls of burrata cheese. I like to drizzle my burrata with 1/2 tsp olive oil and salt.
Then pour your dressing over the salad, and top with basil, goat cheese, and prosciutto!
