Gluten & Refined Sugar-Free Rice Krispie Treats

I am extremely excited about this dessert/snack recipe.

When I was younger, Rice Krispie treats were one of my favorites. Since I am older and realize I just can’t eat like that anymore, I was definitely sad I had to give up some of my most cherished snacks.

This past year, I found the cereal One Degree Organics Brown Rice Crisps. I started eating the sprouted brown rice cereal, and the sprouted brown rice cacao cereal like crazy. I was just so excited to have a cereal I could eat again AND that was actually affordable.

The regular sprouted brown rice cereal only has 4 ingredients! It’s gluten free, dairy free, and is only sweetened with coconut sugar! The cacao one has only 7 ingredients. Personally, to just eat as cereal – the cacao one is better. BUT – for rice crispy treats, the plain ones resemble the taste of the iconic snack the best. Not to say you couldn’t use the cacao ones for rice crispy treats as well!

So recently my mom found a brand of marshmallows that have no refined sugar so naturally, we had to try them. I really miss marshmallows.. but I know they are bad for me because they are essentially made of processed sugar. We bought the brand Know Brainer Max Mallow. We got the classic vanilla flavor, which is sweetened with a monk fruit and erythritol blend.

As long as you have these marshmallows and One Degree Organics Brown Rice Crisps- all you need is coconut oil, vanilla extract, and salt!

The process of making them is SO easy. Just melt the coconut oil in the microwave, place the marshmallows in the same bowl and melt them in the microwave, toss in the vanilla and salt, then mix in with the cereal and press them down into a dish with parchment paper.

15 minutes later – you have your rice crispy treats!

I melted my favorite HU chocolate and drizzled them on top for an extra chocolatey flavor – which I highly suggest! HU chocolate is dairy free and is only sweetened with coconut sugar.

These rice crispy treats have been highly rated in my house since I created them last week, and I hope you all enjoy them as much as we have!

This makes about 15-18 rice crispy treats – depending on how big you cut them!
