Gluten Free Scalloped Potatoes and Ham

Scalloped potatoes and ham has been a recipe that my mom has made for as long as I can remember.

It is one of my favorite comfort-foods, and is a simple and affordable meal.

To make the scalloped potatoes and ham, you must first peel the potatoes, and slice them. I highly recommend using a mandolin slicer. It makes all the slices even, and speeds the process up. I use a Pampered Chef one like the one below, however, there are many different brands. Of course, if you do not have one, you can always just slice using a knife – trying to make the pieces even.

Once you have finished peeling and slicing, you are going to cut the ham into bite size pieces, and then chop the onion. When you finish chopping everything, now would be a great time to preheat the oven to 350 degrees.

Now, in a small/medium saucepan, melt 1/2 cup butter oven low-medium heat. Then stir in 1/2 cup cassava flour, 1 tsp salt and 1/2 tsp pepper. Cook, stirring constantly for about a minute and a half.

Once these ingredients are blended, remove saucepan from heat and add in 1/2 cup heavy whipping cream (I like to use organic valley), and 1 1/2 cups of the milk of your choice. Once these are added, return saucepan to heat and continue cooking until sauce is thickened.

Once sauce is thickened, fold in cut ham, 1 large onion, and 1/2 cup cheddar cheese, and mix for a minute. Pour this mixture over the sliced potatoes in a bowl, and thoroughly mix. Then you will transfer to a 9×13 inch baking dish and cover with foil.

Place in oven and bake for 30 minutes. Remove foil and cook for 1 more hour. Take out of oven, let cool for 10 mins, and enjoy!
