This summer we have been able to grow some beautiful tomatoes, cucumbers, jalapeños, and cilantro in our garden; so I wanted to find a way to incorporate them all into a recipe!
Mango is one of my favorite fruits, and is ripe during this time of year, so we always have it on hand at home. Just add some onion, oil, salt, and chili powder to the mix, and you have yourself a colorful and delicious dish.
This salsa is so simple and tasty, you can eat it as a side dish with pretty much any summer meal.
