Anyone grow lavender in their garden this year? Well we did and I have a TON of it!
I dried a lot of it out and now I need to find something to do with all of it – hence, this delicious blackberry Lavender cake.
Not only did our lavender do well this year, but our blackberries are a while other story – wow!
We have blackberries galore, I have never seem so many. Usually it’s the raspberries that do so well but not this year.
I love that I was able to incorporate both of these ingredients from our garden. Something about eating garden fresh food is so much more satisfying.
I used blackberries with this and as much as I love it, I am sure you could use blueberries as well! I think they would be really good.
I used not only frosting for this but also a homemade jam to add a little extra flavor! Since honey is the only sweetener in the cake (apart from maple sugar in the the frosting) making this jam really adds a little extra sweetness to the cake.
The jam is super easy to make so don’t worry that it is an extra step! Just lavender, blackberries, lemon, and honey!
Lastly, is the frosting – just 3 ingredients!
This cake is definitely thicker (but not dry!) and kind of reminds me a giant pancake 😋 I hope you guys like!
