Can I just say how THRILLED and HAPPY I am to finally eat an ice-cream sandwich again! I mean WOW.
If my excessive use of caps lock hasn’t given it away, I think you can understand how obsessed I am with these ice-cream sandwiches. The kind of obsessed that I have eaten them almost every night this week and last for dessert.
Since I can’t have gluten anymore and my stomach begs me to stop eating dairy, ice cream sandwiches have been out of the question for a while now. I know many of you out there struggle with similar issues. This is why I am so excited to get this recipe out there! I hope you all can make these and enjoy them as much as I do!
The cookies are completely gluten free, as everything I make is. They are also completely refined sugar free, including the ice cream (it is my favorite brand of ice cream by the way and you should definitely try the others flavors!) The brand is called Cosmic Bliss and it is plant based, organic, and dairy and refined sugar free! I love that they are made with only a few simple ingredients that I actually understand! You can find it at Wegmans.
Unless you are using Cup4Cup Multipurpose flour (which contains rBST-Free Milk Powder) everything is dairy free. I personally don’t have an allergy to dairy, I am just really sensitive. I use the Cup4Cup Multipurpose flour and have no issues with it, however, if you have an allergy to dairy I would stay away.
The Cup4Cup Wholesome flour and Ancient Grains flour is dairy free though. I haven’t tried them, but will in the future. Let me know if you use them and how they turn out!
Bob’s Red Mill 1:1 flour can be used for this as well, and does not contain any dairy.
I love using the Hu dark chocolate gems as they are also dairy free and refined sugar free! If you have read previous posts of mine, you know I love the Hu brand.
The recipe should make around 4-6 ice-cream sandwiches, depending on how large you make the cookies.
